\nA gastronomic delicacy with a big discrepancy between appearance and taste. The well-muscled muscles are a world of concentrated flavour that is irresistible. Fresh fish from Shinoka Shoten in Yoichi, Hokkaido.<\/p>\n

\u3000Do you know what an octopus’ mouth is? Most people think that the mouth is the part where the octopus spits out ink, but in fact, the octopus mouth is the slightly black part at the centre point where the eight legs meet. I had always misunderstood it, and at a fresh fish shop called \u2018Nioka Shoten\u2019 in Yoichi, Hokkaido, where I often stop by on my drives, the owner, who has become a friend of mine, told me to \u2018think I’ve been cheated and try it once\u2019, so I bought it.
\n\u3000This fresh fish shop faces National Highway 5, but immediately behind it is a fishing area facing the Sea of Japan, where fresh fish are purchased from local fishermen and sold. For fish lovers, the shop scene is a smiley sight to behold. I sometimes go there to get fresh sushi items etc.
\n\u3000And one time, this octopus mouth was recommended to me. I was put off by the fact that it looked like an eyeball, but I trusted him, so I bought it and came back with the mindset that if it kills you, it will kill you. I boiled it, prepped it, carefully removed the black octopus \u2018teeth\u2019 and cut it into bite-size pieces, then lightly marinated it in vinegar, soy sauce and broth.<\/p>\n

\u3000The troublesome part is removing the black teeth, which is in essence cooking with a knife.
\n\u3000When I cooked it for the first time last time, it was a big hit with my wife and daughter. It is said that the most active part of an animal’s body, the muscular part, has the most concentrated flavour, and this octopus mouth is a perfect example of that. The octopus mouth is a perfect example of this. It may look a little scary, but once you get used to eating it, you will become completely addicted to it.
\n\u3000This time, seven octopus pieces cost 480 yen. They are cooked as shown in the photo and filled into a large food storage Tupperware. If you keep it refrigerated and eat it, you can share it with your children’s family and still have enough for a week. Super affordable feeling. There is some knife work involved, but if you can get past that, it’s a gastronomic dream (laughs).
